Since the 60s, the grandfather of the current owner, began a restoration of the old buildings with the aim of turning them into rooms used as a cellar to make wine the grapes produced. The radical process of change, however, comes only in the 90s with the arrival in the company of a descendant of Tersilio grandfather, Dr. Gabriele Marchesi beginning, so, a process of restructuring of the entire company complex, starting from the vineyards, where it is privileged cultivation of the two varieties that are best suited to the territory: Pinot Noir and Riesling .The old cellar is completely renovated and, to the oak barrels are flanked by modern premises used to pressing and fermentation and storage of wines with small stainless steel thermo conditioned. The imposing 800 underground tank, then used to collect rain water, it is transformed into a unique wine cellar, ideal for fermentation and maturation of sparkling prestigious Metod Classic. In short, the entire hotel has been designed mainly for machining of the two above mentioned varieties, in order to exalt them in the different types of wines that have to be so closely linked with the tradition and the territory, but in a constant innovative research where to express maximum quality potential.
The version of Monsaltus Late Harvest is obtained from grape over-matured plan.
The resulting wine embodies all the natural evolution of the typical slightly bottritizzata grape aromas. Typical wine for blue cheeses and "strong kitchen."
Intense golden color with green highlights, the intense and complex nose, yellow jam on the bottom, they highlight feelings of acacia honey, citrus and lime.
The palate is still fresh but very warm and soft from the natural residual sugar.
