Today, the company manages 45 hectares of organic vineyards, cultivated with respect for the environment and in full compliance with natural rhythms. The beating heart of the winery is represented by the underground structure, surrounded by a stream that guarantees a constant and ideal temperature for the refinement of the wines. This design choice, in addition to promoting an optimal microclimate, minimizes the environmental impact, limiting the use of artificial air conditioning systems. The production of Franciacorta Mirabella is characterized by careful respect for tradition and a constant commitment to innovation. All the sparkling wine bases undergo malolactic fermentation, a natural process that helps give the wine greater aromatic complexity and greater softness. The aging on the lees, prolonged for several months, allows the sparkling wine to develop a fine and persistent perlage and to acquire complex and pleasant aromatic notes. Franciacorta Satèn di Mirabella is a sparkling wine of the highest quality, produced in the renowned Franciacorta region. This wine, thanks to its delicacy and elegance, is considered one of the best examples of Satèn, a type of Franciacorta characterized by a fine and persistent perlage and a soft and enveloping taste. Satèn differs from the classic Franciacorta Brut for a lower pressure in the bottle, which gives it a finer perlage and a more delicate taste. Furthermore, Satèn is produced exclusively with Chardonnay grapes, which give it a unique elegance and aromatic complexity. The Chardonnay grapes used to produce Franciacorta Satèn di Mirabella come from vineyards located in an area particularly suited to the cultivation of this vine, characterized by calcareous and moraine soils. These soils, together with the cool and sunny climate of Franciacorta, give the wine a unique minerality and freshness. The vinification of Franciacorta Satèn di Mirabella is done following the classic method, the same used to produce Champagne. The grapes, harvested by hand, are softly pressed to obtain a high-quality must. Fermentation takes place in steel at a controlled temperature, to preserve the freshness and aroma of the wine. Subsequently, the wine is bottled with the addition of yeasts and sugar, to start the second fermentation in the bottle.

To the eye, Franciacorta Satèn di Mirabella presents itself with a bright straw yellow color, with greenish reflections. On the nose, the bouquet is broad and complex, with notes of white-fleshed fruit such as apple, pear and peach, enriched by delicate floral nuances and hints of yeast. On the palate, the wine is characterized by a good structure, a lively acidity and a long and persistent finish. The perlage is fine and persistent, enveloping the palate with a sensation of softness and creaminess. Franciacorta Satèn di Mirabella is an extremely versatile wine that pairs perfectly with a wide range of dishes. It is ideal for accompanying delicate appetizers, first courses based on fish or shellfish, white meats and fresh cheeses.
