Cesanese Riserva

The Cirsium, whose name is inspired by the field thistle, is our company selection, coming from a Cesanese di Affile vineyard of about 1 hectare, planted in 1953 and cultivated with a sapling that was later modified on the wall. This vineyard, of course, produces 4 to 6 bunches per vine, which therefore benefit from an enormous amount of substances useful for winemaking. Manual harvesting takes place when the ripeness has reached the optimum. The bunches are carefully chosen, while the imperfect berries are immediately discarded.

The grapes are fermented in cement. Fermentation is spontaneous and maceration lasts about 15 days. After that, the wine is racked into large barrels, where it rests on its fine deposits for the first 12 months. The second year of aging takes place in concrete. After bottling, Cirsium ages in our cellar for at least 1 year.
