Pilarocca

The Piglio Pileum winery is located in the heart of Ciociaria, the land of Cesanese, where thanks to commitment, dedication, respect for traditions and a fair dose of innovation, it has earned a prominent place in the enhancement of the native grape variety par excellence. Here 13 hectares are cultivated in Cesanese di Affile, the noble grape with which Cesanese del Piglio DOCG Classico, Supoiore and Superiore Riserva are produced.

The grapes with which the Pilarocca is carefully produced are selected and harvested by hand, macerate for more than 20 days and carry out the malolactic fermentation in steel. The refinement takes place for 36 months in fine 20 hl oak barrels, first, and in the bottle for a long time, then. A full-bodied and structured wine ideal with red acrnes and baked white meats, as well as with tasty and aged cheeses.
