“Ki No Bi” Gin is made by The Kyoto Distillery, a refined artisan company that specializes in the production of high quality Gin, characterized by a profile faithful to the models of European tradition, interpreted through a careful selection of local botanicals of the highest quality. It is a recent brand, but it can count on the area's great tradition in the cultivation of rice and the distillation of sake. Starting from this wealth of historical knowledge, combined with a passion for the world of Japanese flora, Gins of extraordinary finesse are born, still produced in small batches, which delight connoisseurs and the most attentive enthusiasts.
The “Ki No Bi” Gin from The Kyoto Distillery is a splendid excellence from the Land of the Rising Sun. The Gin preparation process comes from a refined alcohol obtained from rice, according to the most ancient Japanese traditions, which derive from centuries-old experience in the production of sake. A slow and patient phase of infusion and maceration of the botanicals follows, so as to be able to extract all the precious aromas of herbs, roots, plants and berries. The selection of ingredients was taken care of with great knowledge of classic Gin, choosing the best of what the Japanese flora can offer. The botanicals are divided into six large families: the basic ingredients, such as juniper, iris, Hinoki wood; the yellow and lemon Yuzu citrus fruits; Kinome sprout herbs and Sansho green pepper; the spices represented by ginger; flowers and fruit with bamboo and sisho leaves and finally the inevitable Gyokuro green tea. The six groups of botanicals are distilled separately, in order to create homogeneous bases characterized by clear expressive purity. Only at a later stage does the assembly proceed, in order to obtain perfect harmony. Before bottling, the Gin is lowered in grade with pure water coming from the Fushimi springs.
KI NO BI ('The Beauty of the Seasons') is inspired by tradition and is distilled, blended and bottled in Kyoto. This gin is made in a recognizable dry style but with a distinct Japanese accent. KI NO BI Kyoto Dry Gin was created with Japanese botanicals such as yellow yuzu from northern Kyoto Prefecture, hinoki (Japanese cypress) wood chips, bamboo, gyokuro tea from the Uji region and green sanshō berries (Japanese pepper). Bottled at 45.7% ABV, KI NO BI uses a base of rice spirit and unrivaled pure Fushimi water (the same used to produce the renowned sake).
