Calvados is the brandy produced with apples from one of the most prized areas of the 11 recognized as production of Calvados, namely the "Pays d'Auge" in Normandy, where the Famille Dupont company is located, led by Etienne since 1980 Dupont that carries on the history of the family, whose origins date back to the 18th century. E 'with Etienne that the production is improved and evolved but with the eye turned to the quality rather than the quantity. Next to the ancient orchard, others are planted in specialized cultivation, with an extension of 26 hectares and 6000 apple trees. The apples used are of the typical qualities of the "Pays d'Auge": Saint Martin, Binet, Noel des Champs, Mettais and Doux Normandie, whose peculiarity is the very intense bitter-sweet aromatic taste, due to the lack of fertilizers based on nitrogen and sustainable cultivation techniques. The apples are picked by hand and laid on transpiring crates where they rest until the end of the maturation in 3/4 weeks before being pressed for the extraction of a pure juice with a unique flavor that distinguishes the Cavlados Famille Dupont.

The Calvados Hors d'Age Dupont is produced with 3 apple qualities: 30% Rouge Duret sweets, the bitter Mettais, Saint MArtin, Frequin and Binet Rouge for another 30%, and the high-acid apples called Rambault for the remaining 40%. The apples are all carefully picked by hand, then mixed broken and pressed to produce the juice that is fermented, originating the cider that is subsequently distilled. The double distillation takes place in two phases, the first after about 3 months and gives life to the "petite eau", the second distillation one year from the first is that which gives life to the precious Calvados which will age for 10/12 years in barrels of 400 lt of which 25% new, with its unmistakable sapoire.
