Cervaro della Sala, the “flagship” wine of this estate, has earned important recognition and countless fond admirers. It is a blend of Chardonnay and Grechetto grapes, fermented and aged for five months in barriques. It then matures in the bottles for about 10 months in the Medieval cellars of the Castle.
Montefalco Bianco produced by the Arnaldo Caprai winery, is a wine with a bright straw yellow color, the nose expresses notes of jasmine, pear and banana, accompanied by some hints of aromatic herbs. In the mouth it is tasty and fresh, with a long and very persistent finish.
Anima Umbra produced by the Arnaldo Caprai winery, is a straw yellow colored wine with greenish reflections, the nose expresses light fruity notes, with elegant more mineral hints. In the mouth it is fresh, dry and with a good structure and balance. The finish is long and slightly almondy.
A respectable white, Arnaldo Caprai's Cuvée Secrète fascinates with its complexity that takes you on an unexpected sensory journey: anise, citrus fruits, spices, vanilla, honey and menthol notes surrounded by a pleasant minerality.
Particularly refined wine, comes from a careful selection of Sauvignon Blanc grapes to which a small percentage of wood fermented semillon is added; it is then refined in the bottle for a few months.

The Castello della Sala towers over a tufaceous promontory of the Umbrian Apennines just a short distance away from the boundary with Tuscany and approximately 18 kilometers (11 miles) from the historic city of Orvieto. It is a lovely medieval fortress, surrounded by historic, hillside Etruscan villages, halfway between the Paglia river and the peak of Mount Nibbio.
