Orci is Trebbiano vinified in terracotta amphorae with maceration on the skins for three months.
The most produced wine of the Fattoria di Petrognano is Chianti in the "young" type and accounts for 70% of production. Its vinification is traditional, in stainless steel, with maceration on the skins not too prolonged. After the grapes vinified separately for each individual vineyard Sangiovese and Canaiolo assemble they will form cutting Meme Chianti DOCG.
